  • 1 lb boneless, skinless chicken breast
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions; add broccoli during the last two minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat and sauté seasoned chicken until golden brown (about 5-6 minutes). Remove and set aside.
  3. In the same skillet, melt butter and cook minced garlic until fragrant. Stir in heavy cream and chicken broth; blend in cream cheese until smooth.
  4. Add Parmesan and mozzarella cheese to the sauce; stir until thickened. Season with salt, black pepper, and optional red pepper flakes.
  5. Toss the cooked pasta, broccoli, and chicken into the sauce until well combined. Garnish with fresh parsley before serving.
