  • 9 oz cheese tortellini
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp Cajun seasoning
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic

Instructions

  1. Cook the tortellini according to package instructions in salted boiling water. Reserve 1 cup of pasta water before draining.
  2. Season chicken breasts with Cajun seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and sear the seasoned chicken for about 4-5 minutes on each side until golden brown. Remove and cover.
  4. In the same skillet, reduce heat to medium, add butter and garlic; sauté until fragrant (about 30 seconds). Pour in heavy cream and stir in Velveeta until melted. Add mozzarella cheese and mix until smooth.
  5. Toss the cooked tortellini in the sauce and gradually add reserved pasta water to reach desired consistency.
  6. Return the chicken to the skillet, allowing everything to simmer together for about 12 minutes.
  7. Serve hot, garnished with fresh parsley if desired.
