- 1 lb boneless skinless chicken breast or thighs
- 2 tbsp olive oil
- 1 tbsp butter (for searing)
- 1 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & black pepper, to taste
- 12 oz rotini pasta
- 2 tbsp butter (for sauce)
- 4 cloves garlic, finely minced
- 1 cup heavy cream
- 1 cup whole milk
- 4 oz cream cheese, softened
- 1 cup Velveeta, cubed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Pinch of red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
- Cook the rotini pasta in salted boiling water until al dente (10-11 minutes). Drain and set aside.
- Sear seasoned chicken in a skillet with olive oil and butter until golden brown (6-8 minutes). Remove and set aside.
- In the same skillet, sauté minced garlic in butter, then stir in heavy cream and milk followed by cream cheese and Velveeta until smooth.
- Add cooked rotini to the sauce, mixing until well-coated.
- Serve with seared chicken on top, garnished with fresh parsley.
