  • 1 lb boneless skinless chicken breast or thighs
  • 2 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 12 oz rotini pasta
  • 2 tbsp butter (for sauce)
  • 4 cloves garlic, finely minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese, softened
  • 1 cup Velveeta, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente (10-11 minutes). Drain and set aside.
  2. Sear seasoned chicken in a skillet with olive oil and butter until golden brown (6-8 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic in butter, then stir in heavy cream and milk followed by cream cheese and Velveeta until smooth.
  4. Add cooked rotini to the sauce, mixing until well-coated.
  5. Serve with seared chicken on top, garnished with fresh parsley.
