  • 1.5 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable oil
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth or water
  • Juice of lime
  • Cooked jasmine rice for serving
  • Garlic naan for serving

Instructions

  1. Prepare all ingredients by cutting the beef into cubes and slicing the onion.
  2. In a heavy-duty pot, heat vegetable oil over medium-high heat. Season beef with salt and pepper, then brown in batches for 5-7 minutes.
  3. Remove beef and sauté onions, garlic, and ginger until onions are translucent (3-4 minutes).
  4. Stir in curry paste and turmeric, cooking until fragrant (1 minute). Add coconut milk and broth; mix well.
  5. Return beef to the pot, stir in brown sugar and lime juice. Bring to boil, then reduce heat to low and simmer covered for about 2 hours.
  6. Serve hot over jasmine rice with warm garlic naan.
