  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Heat coconut oil in a cast iron Dutch oven over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add garlic and ginger; cook until fragrant.
  2. Stir in curry powder, turmeric, cumin, smoked paprika, and cayenne (if using). Cook for an additional 2 minutes.
  3. Increase heat to medium-high and brown the beef chunks for about 5-7 minutes.
  4. Mix in tomato paste before adding coconut milk and beef broth; stir well to combine.
  5. Bring to a boil, then reduce heat to low and cover. Let simmer for approximately 2-3 hours until the beef is tender.
