  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • Salt & black pepper to taste

Instructions

  1. Heat coconut oil in a heavy pot over medium heat. Sauté sliced onion until translucent.
  2. Add minced garlic and grated ginger; cook until fragrant.
  3. Brown the beef chunks on all sides for about 5 minutes.
  4. Stir in red curry paste, ground cumin, cinnamon, turmeric, and optional chili flakes until the meat is well coated.
