  • 1⅓ cups shredded coconut
  • ½ cup slivered almonds

  • 13-ounce jar apricot preserves (or any favorite jam)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9 x 13-inch baking pan with non-stick foil or regular foil coated with cooking spray.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and mix well until fully incorporated.
  4. Whisk together the flour and baking powder, then gradually add to the butter mixture. Stir in the shredded coconut, slivered almonds, and vanilla until blended.
  5. Press two-thirds of the dough into the prepared pan evenly.
  6. Spread apricot preserves over the layer of dough carefully.
