  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted if desired)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans or one bundt pan.
  2. In a large bowl, whisk together vegetable oil, sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, combine flour, cinnamon, baking powder, baking soda, and salt; mix well.
  4. Gradually add the dry ingredients to the wet mixture and fold in the chopped pecans until just combined.
  5. Pour the batter into prepared pans and bake for 45-55 minutes (loaf pans) or 55-65 minutes (bundt pan), until a toothpick comes out clean.
  6. Let cool in pans for about 10 minutes before transferring to a wire rack.
