  • 1 tsp baking soda

  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp softened butter
  • 2 Tbsp cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon until smooth for the filling.
  3. In a large mixing bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Cream cold cubed butter in a stand mixer; gradually add granulated sugar until smooth.
  5. Add eggs and vanilla extract; blend until combined.
  6. Incorporate the dry ingredients gradually into the creamed mixture.
  7. Shape the dough into a rectangle on a floured surface and spread the cinnamon filling evenly over it.
  8. Roll tightly from one edge; cut into 10-12 equal pieces and form into balls.
  9. Bake on a lined baking sheet for 9–11 minutes until golden brown.
  10. Cool on the baking sheet before transferring to a wire rack.
  11. For frosting: Beat together cream cheese and softened butter; mix in confectioners' sugar, vanilla extract, and salt until smooth.
