  • 4 tablespoons finely chopped cilantro
  • 2 tablespoons lime juice
  • Red chili flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together olive oil, garlic, cilantro, lime juice, red chili flakes, and salt.
  3. Add chicken thighs to the marinade and stir to coat evenly. Let marinate for at least 15 minutes (up to 2 hours for best flavor).
  4. Heat a skillet over medium-high heat and place chicken skin-side down. Cook until browned (about 5-7 minutes), then flip and brown the other side.
