  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 1 1/2 ripe avocados (diced)
  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion (rinsed)
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice

Instructions

  1. In a mixing bowl, whisk together lime zest, lime juice, olive oil, honey, cilantro, minced garlic, salt, and pepper.
  2. Marinate the chicken by placing it in a resealable bag or shallow dish; pour marinade over chicken and let it sit in the refrigerator for at least 15 minutes.
  3. Preheat your grill or grill pan over medium-high heat and brush with olive oil. Grill chicken for about 5-7 minutes per side until fully cooked.
