  • 1 cup broccoli florets
  • 1 red bell pepper, sliced

  • 1 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • Salt & pepper, to taste
  • Optional: chili flakes or sesame oil
  • 1 cup cooked brown rice
  • Optional: pinch of salt or a drizzle of olive oil

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add seasoned chicken strips and cook until browned and fully cooked through (about 6-8 minutes). Set aside.
  2. In the same pan, stir-fry all the vegetables (zucchini, broccoli, red bell pepper, onion) for about 5-7 minutes until tender-crisp. Add soy sauce and garlic powder. Stir in the cooked chicken to combine flavors.
  3. Warm the cooked brown rice in a separate pot or microwave. Fluff it with a fork to get that light texture.
  4. Scoop the vibrant stir-fry onto a plate next to a mound of fluffy brown rice. Garnish with chili flakes or a drizzle of sesame oil if desired. Serve warm!
