  • 4 cups pitted bing cherries (fresh or frozen)
  • 1/4 cup water
  • 1 1/2 tablespoons cornstarch
  • 1/3 cup sugar
  • 12 teaspoons lemon juice (to taste)
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 cup + 2 tablespoons sugar (divided)
  • 3 tablespoons cold butter
  • 2 tablespoons buttermilk
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a heavy-bottom saucepan, combine pitted cherries, cornstarch mixed with water, and sugar. Cook over medium heat until thickened (5–7 minutes). Add lemon juice to taste.
  3. In a mixing bowl, whisk together flour, 1/4 cup sugar, and baking powder. Cut in cold butter until crumbly.
  4. In another bowl, mix egg and buttermilk; stir into the flour mixture until just combined.
  5. Pour the cherry filling into a greased baking dish and drop spoonfuls of dough over it evenly. Sprinkle remaining sugar on top.
  6. Bake for about 20–25 minutes until golden brown.
