  • 16 oz sugar (454 grams)
  • 1.5 oz lemon juice (freshly squeezed)
  • 0.5 oz balsamic vinegar (1 tablespoon)
  • 1/2 vanilla bean (split and scraped; or 1 teaspoon vanilla extract)

Instructions

  1. Wash the blueberries thoroughly and remove any stems.
  2. In a large pot, combine blueberries, sugar, lemon juice, balsamic vinegar, and vanilla seeds along with the pod.
  3. Over medium heat, stir until sugar dissolves completely.
  4. Bring to a boil while stirring frequently.
  5. Reduce heat and let simmer for about 30 minutes until thickened.
  6. Ladle hot jam into sterilized jars and seal tightly.
