  • 16 oz. cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup fresh or frozen blueberries
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 13 x 9 inch baking pan with aluminum foil and spray with non-stick cooking spray.
  2. For the crust, mix together flour and powdered sugar in a bowl. Add diced butter and mix until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes until lightly golden, then let cool slightly.
  4. In another bowl, beat softened cream cheese, butter, sugars, eggs, milk, lemon juice, and vanilla extract until smooth.
  5. Gently fold in blueberries and pour this mixture over the cooled crust.
