  • 2 teaspoons baking powder

  • 2/3 cup cold butter, cut in cubes
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 8 oz. mascarpone
  • 8 oz. cream cheese, softened
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat oven to 350°F. Line a 9-inch springform pan with parchment paper and spray with nonstick spray.
  2. In a large bowl, mix flour, baking powder, salt, brown sugar, and lemon zest. Incorporate cold butter until grainy.
  3. Add eggs and vanilla; mix until combined.
  4. Press 2/3 of the mixture into the bottom and sides of the prepared pan.
  5. In another bowl, beat mascarpone, cream cheese, caster sugar, corn starch, and eggs until just combined.
  6. Pour half of the cheesecake mixture into the crust; sprinkle with 2/3 cup blueberries. Top with remaining cheesecake mixture and blueberries.
  7. Bake for 65–75 minutes until golden brown; cool gradually in the oven with door ajar.
  8. For glaze, mix powdered sugar and milk until smooth.
