  • 14.5 ounces black beans
  • 1 cup red bell pepper
  • 1 ½ cups green bell pepper
  • 4 tablespoons olive oil
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • Corn or flour tortillas

Instructions

  1. Preheat your oven to 425°F.
  2. In a large bowl, coat sweet potato cubes with olive oil and spices (cumin, paprika, garlic powder, onion powder, coriander, salt, and pepper).
  3. Spread sweet potatoes on a baking sheet and roast for about 20 minutes.
