  • ¼ cup granulated sugar (for filling)
  • 1 large egg yolk (for filling)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line your muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree with granulated and brown sugars until smooth. Add eggs one at a time, then incorporate oil and vanilla. Gradually mix in the dry ingredients until just combined.
  4. In another bowl, beat cream cheese until smooth, then add sugar, egg yolk, and vanilla; mix well.
  5. Fill muffin tins about three-quarters full with batter. Top each muffin with about one tablespoon of the cream cheese mixture and swirl gently using a toothpick.
