  • 1/2 tsp salt (divided)
  • Avocado oil spray (or 1 to 2 tsp liquid oil)
  • 1 tsp smoked paprika
  • 1/4 tsp ground pepper
  • Additional salt to taste

Instructions

  1. Slice the zucchini crosswise into 1/8 inch thick slices using a mandolin slicer or food processor.
  2. Layer the slices in a colander, sprinkling with about 1/4 tsp salt total. Let them drain for one hour.
  3. Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.
  4. Pat dry the zucchini slices with a tea towel and arrange them on the baking sheets without overlap.
  5. Spray lightly with avocado oil or brush with liquid oil.
  6. Mix smoked paprika, ground pepper, and remaining salt in a spice shaker and sprinkle over the zucchini.
  7. Bake for 70 to 90 minutes until crispy, rotating sheets halfway through baking.
  8. Sprinkle with additional salt before serving.
