  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 block (200g) feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon (quarter it)
  • 1 tbsp honey
  • ¼ cup fresh basil

Instructions

  1. Preheat oven to 200C | 390F.
  2. Wash and cube the baking potatoes. Boil in water for 6-8 minutes, then drain and let steam dry.
  3. In a baking dish, toss potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes.
  4. Roast for 30 – 40 minutes until golden brown.
  5. Add feta cheese and squeeze half a lemon over it.
  6. Roast for an additional 15 minutes.
  7. Mash roasted garlic and mix with remaining lemon juice, then combine with potatoes and fresh basil.
  8. Drizzle honey over the dish before serving.
