  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tablespoons olive oil
  • 1 head of garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red chilli flakes
  • 1 lemon, quartered
  • 1 tablespoon honey
  • 20g fresh basil

Instructions

  1. Preheat oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil for 6-8 minutes.
  3. Drain and coat with olive oil and seasonings in a baking dish.
  4. Roast for 30 minutes until golden.
  5. Add feta and lemon juice; roast for another 15 minutes.
  6. Mix in roasted garlic and fresh basil before serving.
  7. Drizzle with honey for an extra layer of flavor.
