  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning
  • 3 tbsp olive oil
  • 2 cups baby potatoes
  • 2 cloves garlic
  • 1 bunch asparagus
  • 1 cup shredded mozzarella

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss baby potatoes with olive oil, minced garlic, salt, pepper, and chopped parsley in a mixing bowl. Spread on a baking tray and roast for 25-30 minutes until golden and crispy.
  3. Place trimmed asparagus on another baking tray, drizzle with olive oil, and season. Bake for 12-15 minutes. In the last 5 minutes, sprinkle cheese over the asparagus until melted.
  4. Rub both sides of the salmon with Cajun seasoning and olive oil. Bake or pan-sear at 400°F (200°C) for about 12-15 minutes until cooked through.
  5. Serve by layering garlic potatoes first, followed by cheesy asparagus, and top with salmon. Garnish with fresh parsley.
