  • 2 eggs
  • 1 cup fresh spinach
  • 1 cup diced sweet potatoes
  • Sliced avocado
  • 1 tbsp pickled jalapeños
  • 1 tsp olive oil
  • Salt, black pepper & chili flakes to taste

Instructions

  1. Boil the eggs in water for exactly 7 minutes. Transfer them to an ice bath to cool before peeling.
  2. Preheat the oven to 200°C (400°F). Toss diced sweet potatoes in olive oil, salt, and pepper. Roast on a baking tray for 20-25 minutes, turning halfway.
  3. Sauté fresh spinach in a nonstick pan over medium heat until wilted (about 2 minutes).
  4. Assemble by layering spinach first, followed by roasted sweet potatoes and sliced avocado. Halve the boiled eggs and place them on top.
  5. Finish with a sprinkle of chili flakes and black pepper along with pickled jalapeños for an extra kick.
