  • 1 3/4 cups flour (sifted)
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • 8 oz cream cheese (softened to room temperature)
  • 1 cup butter (softened to room temperature)
  • 1 jar quality apricot preserves

Instructions

  1. Cream the softened butter and cream cheese using an electric mixer until smooth.
  2. In a separate bowl, sift together the flour and salt; stir in lemon zest.
  3. Gradually blend the dry ingredients into the creamed mixture with a wooden spoon until combined; the dough will be slightly sticky.
  4. Form the dough into a ball and refrigerate for 30 minutes.
  5. Cut the chilled dough into three pieces, rolling each piece out on a floured surface to about 1/8 to 1/4 inch thick; cut into 3-inch squares.
  6. Place 1 teaspoon of apricot preserves in the center of each square; brush edges with lightly beaten egg whites.
  7. Fold corners toward the center to cover filling and pinch seams together; brush tops again with egg whites and sprinkle lightly with granulated sugar.
  8. Arrange on an ungreased cookie sheet about an inch apart and bake at 350°F (175°C) for approximately 25 minutes or until lightly browned.
  9. Allow cookies to cool on a rack before serving.
